I&#8217;ve been holding onto <a href=\"http:\/\/www.slashfood.com\/2006\/04\/13\/garden-party-carrot-mini-muffins-filled-with-cream-cheese\/\">this recipe<\/a> for months.  For some unknown reason, instead of this:<\/p>\n<p><a href=\"http:\/\/photos1.blogger.com\/blogger\/2479\/230\/1600\/mini_carrot_muffins.jpg\"><img decoding=\"async\" src=\"https:\/\/eaumaison.us\/wp-content\/uploads\/2023\/03\/mini_carrot_muffins.jpg\" alt=\"\" border=\"0\" \/><\/a><\/p>\n<p>mine turned out like this:<\/p>\n<p><a href=\"http:\/\/photos1.blogger.com\/hello\/23\/2133\/640\/DSCF0024-3.jpg\"><img decoding=\"async\" src=\"https:\/\/eaumaison.us\/wp-content\/uploads\/2023\/03\/DSCF0024-3.jpg\" border=\"0\" \/><\/a><\/p>\n<p><a href=\"http:\/\/photos1.blogger.com\/hello\/23\/2133\/640\/DSCF0029.2.jpg\"><img decoding=\"async\" src=\"https:\/\/eaumaison.us\/wp-content\/uploads\/2023\/03\/1_DSCF0029.0.jpg\" border=\"0\" \/><\/a><br \/>ugh.  Looks aside, they&#8217;re heavy, sticky, and a little too sweet.  I don&#8217;t know what I did wrong!  The only deviations from the recipe were omitting the walnuts and adding a tablespoon of flour (for high altitude).  Additionally, the recipe claims to make 24 mini  muffins, filling each cup 3\/4 full with batter.  I nearly filled the mini cups (hoping for a high crown, Ha!) and still had enough batter left for 6 regular large muffins.  The cream cheese just oozed on top, instead of descending into the muffin.  I blame the recipe.  What a disappointment.
